香肠滚切机用于割断蒸煮后的天然和人造肠衣的肠类制品的扭结。主要功能是通过滚筒的滚动，使筒内的勾刀把扭结肠类产品从扭结的节处切断。根据其工作原理，香肠最好有一定长度（重量），特别短的香肠切割效果不理想。其对香肠的弯曲要求则不特别严格。该设备不对所切割的香肠根数计数，也不能对香肠成串的切割。
　　Drum sausage cutting machine is used to cut sausage twists with both natural and man-made casing sausages.  A large number of hooks with knifes are fixed inside a rotating drum. The  sausages are hooked and twists are cut apart during drum rotating.  Because the cutting takes place by gravity, sausages being cut should have certain length and weight. Otherwise it is not easy to get good result.  Bent sausages can also be cut.  It can not count the number and can not cut in a set string.
